Huaiyang cuisine is derived from the native cooking styles of the region surrounding the lower reaches of the Huai and Yangtze Rivers (hence the name) and centers around the cities of Yangzhou and Huai’an in Jiangsu province. It originated in the early Qin Dynasty (221-207 BC) and gained national fame during the Sui Dynasty (581-617 AD) and Tang Dynasty (618-907 AD). Huaiyang cuisine has had a profound impact on the culinary culture in Suzhou, Zhejiang, Anhui and Shanghai, all of which quickly took on their own characteristics. After the Ming and Qing Dynasty, Shandong cuisine has had a great influence on Huaiyang cuisine. Huaiyang cuisine originated from the old Yangzhou. During the Tang Dynasty (618-907), Yangzhou was the second largest city in China, after Changan. It is known for its year-round fresh produce. Therefore, materials used in Huaiyang cuisine are primarily seasonal fresh produce. The Huaiyang style of cooking places a great deal of emphasis on material selection and uses more sugar than other Chinese cuisines. It is known for its meticulous preparation process and fine balance between rich flavor and pure taste. Huaiyang cuisine emphasizes preserving the original flavors of the produce and specializes in braising, stewing, roasting and boiling, as these methods are best at bringing out the original flavor of the ingredients. My family started edging me to learn more about these tea diets because they know I’m a perfectionist when it comes to my research (and my weight now too!!! I LOVE MY BODY!), and they saw me doing what looked like a science lab experiment with all my tea lol.

Every one likes to eat fresh fruits, it is one of the few mandatory pleasures that we can take for granted. Do not only eat the fruits, people also use it in other applications. Then chopping fruit can be used to make chutney which is a typical south Asian spice. Asians like to cook it with dishes. Their texture can vary from rough to smooth and their spiciness varies too, from hot to mild.


In addition, in some restaurant, we can see many dishes impresses people a lot by its elegant garnishing. This is also a usage of fruits. Different from others, the fruits chef use to make garnishing is usually with both bright color and light to eat. Citrus are quite popular, as are berries.


What’s more, salads are the food popular in hot weather and welcomed by people who plans to losing weight. Fresh fruits can be used to make a fruit salad or mixed fruit and vegetable salad. When preparing mixed fruit and vegetable salads, grated fruits such as apples, pears and coconut, to blend in quite well. Lemons can also be used to rinse through salad leaves, their acidic qualities kill germs and add flavor.

Carrots, a delicious and versatile vegetable.  Have you ever had Carrot Pie?  This recipe is from my teenage years in Southern Indiana.  It is similar to pumpkin pie in texture a somewhat in taste as it has some of the same spices.  Give this tasty pie a try.  And the Bite-Size Carrot Cake Cookies are very tasty.  Surprise your family and friends with this healthy vegetable made into some very tasty cookies and a wonderful pie that will be a surprise!

3/4 cup sugar
1/2 tsp salt
1/2 tsp nutmeg
1 tsp cinnamon
1 tsp ginger
1/8 tsp cloves
1/2 tsp grated lemon rind
2 eggs, slightly beaten
2 cups cooked, sieved carrots
1 cup undiluted evaporated milk
1 unbaked 9-inch pie shell

Combine the sugar, salt, nutmeg, cinnamon, ginger, and cloves in a medium mixing bowl. Add the grated lemon rind, slightly beaten eggs, and carrots; stir to blend. Stir in the evaporated milk until the filling is completely blended. Pour the filling into the unbaked shell. Bake in a 400 degree oven 40 to 45 minutes or until the filling is firm. If the crust edge begins to get too brown, make a protective strip from aluminum foil and cover the crust only. To serve, top with whipped cream, if desired.

Note: This pie is similar to a pumpkin pie in texture and taste. It is a recipe from 1960s Southern Indiana where I was born and raised.

6 tbsp butter, softened
3/4 cup packed brown sugar
1 egg
1/2 tsp vanilla
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon
1 cup grated carrots
1/2 cup raisins
1/2 cup chopped pecans or walnuts

In a large mixing bowl, cream together the butter and brown sugar. Add the egg and vanilla; mix well. Combine the flour, baking powder, baking soda, salt, and cinnamon. Gradually add the flour mixture to the creamed mixture until blended. Stir in the carrots, raisins, and pecans or walnuts.

Drop the mixture by rounded teaspoonfuls about 2-inches apart on ungreased baking sheets. Bake at 325 degrees for 10 to 15 minutes or until the edges are lightly browned and the cookies are set. Cool for a couple of minutes before attempting to remove from the baking sheets to cool on wire racks.
